Black Bean Salsa

She's knocking these recipes out of the park! This Black Bean Salsa is great for any occasion, whether it's a day of watching football with friends and family, or the twelfth Halloween party you've been invited to. It's delicious and pretty darn healthy for a party food, so give it a shot! You won't be disappointed!
A couple of tips before we get to the main event. This recipe makes a huge batch of salsa. You can cute everything in half and still have a large portion to go around. The onion is strong and gets stronger after a few days. Keep that in mind before you decide to alter the recipe and add another. Some of us have learned from experience...
Ingredients:
2 cans black beans, rinsed & drained
2 cans whole kernel corn, drained
1 10-oz. can diced tomatoes and green chilies (do not drain)
1 7.5-oz jar roasted red peppers, drained and diced
2 plum tomatoes, diced
1 medium red onion, finely diced
2/3 cup fresh cilantro, chopped
2 cloves garlic, minced or finely chopped
1/3 cup orange juice
Salt and pepper to taste
Directions:
Mix all ingredients together and enjoy! That's it!
