Easy Grilled Kabobs
It’s September! There’s still time to fire up the grill this Labor Day Weekend is the perfect time! Why not try these amazing Easy Grilled Kabobs this weekend to wow your family and friends?
When it comes to the dressing in the recipe, you can use fat free to full fat. The choice is yours. Just make sure it's full of flavor because that's what you're going for. The longer you marinate it, the more flavor the meat and veggies will have. Our recommendation was to mix chicken and beef, but it's totally up to you. Do all chicken or all beef. Try pork instead. There are many options and variations!
Make this recipe even easier by purchasing pre-cut veggies and meat from your local grocery store. Add a great, healthy side dish of brown rice and you have yourself a nutritional, well-balanced meal. The tools you will need are either wooden or metal skewers, plastic sealable bags or large bowls with plastic wrap to cover, and either an outdoor grill or a grill pan. If you choose wooden skewers, make sure to soak them in water to prevent burning. Another option is to use a grill rack if you don't want to fuss with skewers.
Ingredients: (The amounts depend on how many servings you need, from one all the way to 12)
1 medium onion, diced into chunks about 1 square inch (can be yellow, white or purple)
1 container of button mushrooms (leave whole)
1 medium zucchini, diced into chunks about 1 square inch
1 medium yellow squash, diced into chunks about 1 square inch
1 pound of stew meat
2 large skinless, boneless chicken breasts, diced into chunks about 1 square inch
1-2 bottles Italian dressing of your choice
Once you’ve properly cut up the ingredients, add the veggies, meat, and dressing to the bags or bowls. It's easiest if each ingredient is in a separate bag or bowl, but the veggies can be in the same container. Let marinate in a refrigerator for 30-60 minutes.
Just before removing the meat and veggies from the refrigerator, start heating up the grill.
Begin adding meat and veggies to the skewers. Alternate between veggies and meat.
Grill about 10 minutes at medium high heat before turning over and grilling for another 10 minutes or until meat is browned.
These can be served right away on the skewers or removed and served mixed together in a dish. It’s up to you!
